Spiced Chai Poached Pears

  • 4 Pears
  • 5 cups Water
  • 4 Tea bags
  • 1/2 cup Sugar
  • 1 Cinnamon stick
  • 1 Star anise
  • 4 pods Cardamom
  • 3 Cloves
  • 1/2 tsp Black peppercorns
  • 1 inch Ginger


  • Heat water in a pan, add in the whole spices, sugar, and tea bags. Let it simmer for 10 minutes.
  • Wash and peel the pears. Slice off a thin portion from the bottom of the pears.
  • Remove the tea bags and gently place them in the pears. Poach the pears for 30 minutes on a low simmer, turning occasionally.
  • Gently remove the pears using a slotted spoon. Increase the heat and reduce the chai to a syrup. This should take about 10 minutes.
  • Strain syrup into a heat-proof bowl or pitcher to serve alongside the pears. Place pears in a serving dish or bowl. Serve with a scoop of vanilla ice cream or a dollop of whipped cream, and then douse it all in a drizzle of the beautiful chai pear syrup.
