Dragon Chicken

Ingredients
- 500 g Boneless chicken(cut into strips)
- 1 Onion (sliced)
- 1 Green bell pepper ( sliced)
- 3 Dry red chillies
- Handful Cashew nuts
- 2 tsp Ginger garlic paste
- 1 1/2 tbsp Dark soy sauce
- 2 tbsp Red chilli sauce
- 1 tsp Vinegar
- 4 tbsp Ketchup
- 1/4 tsp Pepper
- Pinch of sugar
- Pinch of red food colouring (optional)
- Salt to taste
- For the marinade
- 1/2 cup Plain flour
- 1/4 cup Corn flour
- 1 tsp Pepper
- Salt to taste
- 2 tsp Ginger garlic paste
- 2 1/2 tsp Dark Soy sauce
- 1 Egg
- 1 tbsp Red chilli sauce
Directions
- Step 1 Marinate the chicken with flour, corn flour, pepper, salt, ginger garlic paste, soy sauce, egg and red chilli sauce. Set it aside for 20 minutes.
- Step 2 Heat oil in a deep pan and fry the chicken pieces on medium flame till they turn golden brown(do it in small batches).
- Step 3 Heat oil in a wok/ pan, add in the cashews and dry red chillies, stir till the cashews turn light brown.
- Step 4 Add in chopped onions and sliced green bell peppers. Saute for two minutes.
- Step 5 Then, add in ginger garlic paste, red chilli paste and stir for a minute. Pour in dark soya sauce, vinegar, ketchup, pepper, sugar, salt and food colouring. Mix well and saute till the sauce starts to boil.
- Step 6 Add in the fried chicken pieces. Toss it well with the sauce until all the pieces are well coated, this should take a few minutes.
- Step 7 Transfer to a serving dish and garnish with spring onions. Serve hot with fried rice or noodles.
