Ingredients
- 3 Tomatoes (chopped)
- 1 cup Cooked basmati rice
- 1 Onion (finely chopped)
- 2 Garlic (finely chopped)
- 1/2 inch Ginger (finely chopped)
- 1 Green chillies (slit)
- 1/2 tbsp Mint leaves (finely chopped)
- 2 tbsp Coriander leaves
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1/2 tsp Turmeric powder
- 1/2 tsp Red chilli powder
- 3/4 tsp Cumin powder
- 1 tsp Coriander powder
- 1/2 tsp Garam masala
- Salt to taste
- 2 tsps Lemon juice
- 2 tbsp Vegetable oil
Method
- Heat oil in a large pan on low flame. Add mustard seeds and let it splutter. Then, add in cumin seeds and saute for a few seconds.
- Then add in chopped onions garlic and ginger, and saute till it turns translucent. Stir in the chopped tomatoes and mint and saute for few minutes.
- Add in turmeric powder, coriander powder, chilli powder, garam masala and cumin powder. Stir well ans saute for a minute. Add a few tablesppons of water if the mixture is too dry.
- Add in the cooked basmati rice and mix everything together till well combined. Saute for a minute and season with required salt.
- Serve hot with raita and pappadam.
