Tomato Rice


  • 3 Tomatoes (chopped)
  • 1 cup Cooked basmati rice
  • 1 Onion (finely chopped)
  • 2 Garlic (finely chopped)
  • 1/2 inch Ginger (finely chopped)
  • 1 Green chillies (slit)
  • 1/2 tbsp Mint leaves (finely chopped)
  • 2 tbsp Coriander leaves
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chilli powder
  • 3/4 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Garam masala
  • Salt to taste
  • 2 tsps Lemon juice
  • 2 tbsp Vegetable oil


  1. Heat oil in a large pan on low flame. Add mustard seeds and let it splutter. Then, add in cumin seeds and saute for a few seconds.
  2. Then add in chopped onions garlic and ginger, and saute till it turns translucent. Stir in the chopped tomatoes and mint and saute for few minutes.
  3. Add in turmeric powder, coriander powder, chilli powder, garam masala and cumin powder. Stir well ans saute for a minute. Add a few tablesppons of water if the mixture is too dry.
  4. Add in the cooked basmati rice and mix everything together till well combined. Saute for a minute and season with required salt.
  5. Serve hot with raita and pappadam.
