Raspberry Clafoutis

INGREDIENTS

1 1/2 cups Fresh Raspberries

1/2 cup Plain flour

1/2 cup Sugar

1/4 tsp Salt

1/4 cup Heavy cream

1/2 cup Milk

4 tbsp Melted butter

1/2 tsp Vanilla extract

3 Eggs

METHOD

Preheat the oven to 200 C. Add all the ingredients except raspberries into a blender and blend until smooth and frothy.

Butter the baking dish an pour in the mixture.Add in the raspberries and bake in the oven for 25-30 minutes until the custard is firm and browned.

Let the clafoutis cool for a bit and dust with powdered sugar (optional). Serve with ice cream or whipped cream.
