Liver Curry

Ingredients
- Ox Liver
- Onions (thinly sliced)
- 1 inch Ginger (minced)
- 4 Garlic cloves (minced)
- 4 Green chillies (slit)
- 1 sprig Curry leaves
- 1 tsp Turmeric powder + 1/2 tsp
- 2 tbsp Coriander powder
- 1 tsp Garam masala
- 1/2 tsp Black pepper
- Salt to taste
- 2 cups Thin coconut milk
- 1/2 cup Thick coconut milk
- 2 tbsp Vinegar
- 1 cup Water
- Oil
Directions
- Step 1 Pressure cook the liver along with a cup of water and turmeric powder for 20-25 minutes on low heat.
- Step 2 Once the liver is cooked, cut them into 2 inch strips. Keep aside the leftover broth.
- Step 3 Heat oil in a large pan over medium heat. Add ginger and garlic and saute for a minute. Add sliced onions, green chillies and curry leaves, saute till the onions turn translucent.
- Step 4 Stir in spice powders and a tablespoon of water, saute for a minute till a nice aroma is released.
- Step 5 Add in cooked liver, leftover broth, vinegar and thin coconut milk. Season with salt, mix well and let it cook for 10 minutes.
- Step 6 Open the lid and pour in half a cup of thick coconut milk. Mix well and turn of the heat. Serve hot with rice, appam or bread.
