This is a recipe with relatively few ingredients that makes a delicious one-pot meal made with minimum fuss. It’s a humble yet flavourful rice dish that can be served as a great mid-week lunch or dinner. The recipe can easily feed 3-4 adults.
Green Beans Pulao
Ingredients
- 1 cups Basmati rice
- 200 g Green beans
- 1 Onion (diced)
- 1 Star anise
- 1/2 inch Cinnamon stick
- 1 pod Cardamom
- 1 Bay leaf
- 1/4 tsp Black pepper
- 2 cups Chicken stock/ Vegetable stock
- Salt to taste
- 1 tbsp Olive oil
Instructions
- Wash the rice and soak it in water for 20 minutes. Meanwhile, chop up the green beans and onions.
- Heat oil in a pan, add in the whole spices and bay leaf, saute for 30 seconds. Add in the onions and green beans, saute till the onions turn translucent.
- Pour in the chicken stock and season with salt and pepper. Bring to boil and add in the washed rice and give it a good stir. Close the lid and let it cook for 18-20 minutes over low heat. Serve hot along with your favourite side dish or have it on its own.
