Dried Shrimp and Raw Mango Curry/ Unnaka Chemmeen Pacha Manga Curry

Ingredients
- 1 cup Dried prawns/ shrimp
- 1 small Onion (finely chopped)
- 1/2 cup Raw mango (cut into chunks)
- 1/2 tsp Turmeric powder
- 1 tsp Red chilli powder
- 4-5 Curry leaves
- 1 cup Water
- 1 tbsp Coconut oil
- For grinding
- 1/2 cup Grated coconut
- 2 Green chillies
- 2 cloves Garlic
- 1 inch Ginger (finely chopped)
- 1/4 tsp Cumin seeds
- For tempering
- 1 tsp Mustard seeds
- 2 Dry red chillies
- 1 sprig Curry leaves
- 1 tbsp Coconut oil
Directions
- Step 1 Clean the dried prawns and dry roast it for a 5 minutes over low heat. Set it aside.
- Step 2 Heat coconut oil in a pan, add ginger, chopped onion and curry leaves, saute till the onion turns translucent.
- Step 3 Add turmeric and chilli powder and saute for a minute.
- Step 4 Add in roasted prawns and mix well. Pour in the ground coconut mixture and add raw mango chunks and a cup of water. Mix well and bring this to a boil and simmer for 5 minutes.
- Step 5 Heat oil in a small pan, add mustard seeds and let it splutter. Add dry red chillies and curry leaves, mix it for a minute and pour this over the curry. Serve warm with rice.
