A great side dish for a week day meal, that you can put together in minutes. Something simple that is low in carbs, crunchy in every bite, with the hint of fresh dill and packed with Asian flavours.
Cucumber & Dill Salad
- 1 Cucumber
- 1/2 Red onion
- 1/4 cup Fresh dill
- 1 tbsp Sesame seeds (toasted)
- 1/2 tsp Ground pepper
- 2 tsp Sugar
- Salt to taste
- 2 tbsp White vinegar
- 1 tsp Sesame oil
- Step 1 Slice the cucumber in half-length ways, and then slice them up thinly. Slice the onions thinly as well.
- Step 2 In a medium bowl, add in cucumbers, onion, sesame seeds, ground pepper, sugar, salt, white vinegar and sesame oil. Gently toss everything together.
- Step 3 Sprinkle in fresh dill and toss again. Cover and refrigerate for at least 30 minutes before serving. It’ll stay good refrigerated for up to 3 days.
