Vindaloo is an Indian curry that is popular in Goa, originated as the Portuguese dish “carne de vinha d’alhos” which basically translates to meat marinated in garlic wine marinade. The Goans then adopted this dish brought by Portuguese colonists and substituted wine with palm vinegar and enhanced the flavours with Indian spices and dry chillies, and the dish quickly became a local classic. Traditionally its made with pork but now versions using chicken, lamb, beef and prawn are also popular.
