Carrot Coconut Ladoo

Ingredients

  • 2 cups Carrots (shredded)
  • 1 1/2 cup Desiccated Coconut
  • 1 tsp Cardamom powder
  • 1/2 – 3/4 tin Condensed milk
  • 2 tbsp Rose water
  • 2 1/2 tbsps Ghee/ Unsalted butter
  • 1 tbsp Almonds (finely chopped)

  • Heat a heavy bottomed pan on low flame, add in the ghee and shredded carrots. Saute the carrots for 10-15 minutes constantly.
  • Now mix in half the quantity of condensed milk and let the carrots cook for a few minutes.
  • Add in rose water, cardamom powder, dessicated coconut and the rest of the condensed milk, and saute the mixture until well combined.
  • Once the condensed milk has absorbed well into the mixture, switch off the flame and mix in the chopped almonds.
  • Let the mixture cool for about 5-8 minutes.
  • Grease your palms with ghee or butter and roll small balls out of the carrot mixture, and after that, roll it in dessicated coconut.
  • There you go, enjoy these delicious Carrot Coconut Ladoos with family and friends! 🙂
