Waking up just got tastier!
Ingredients
- 1 tspn Baking powder
- 1 pinch of salt
- 2 tbsp Sugar
- 140 g Plain flour
- 1 large Egg (lightly beaten)
- 30 grams butter (melted and cooled)
- 135 ml Milk
- 2 tbsp Melted Butter
- Olive Oil for frying
Method
- Mix together the flour, baking powder, sugar and a pinch of salt in a bowl. Beat the egg with the milk, make a well in the centre of the dry ingredients; whisk in the milk and melted butter to make a thick smooth batter.
- Heat a frying pan over medium heat and add a knob of butter or a teaspoon of olive oil. Pour a ladle of batter onto the pan. When the upper side of the pancake starts bubbling turn it over to cook the other side. Now cook it for 2-3 minutes until golden brown and fluffy.
- Serve them hot right away with some honey or maple syrup drizzled over the top and some fresh berries.
