Breakfast Pancakes

Waking up just got tastier!

Ingredients

  • 1 tspn Baking powder
  • 1 pinch of salt
  • 2 tbsp Sugar
  • 140 g Plain flour
  • 1 large Egg (lightly beaten)
  • 30 grams butter (melted and cooled)
  • 135 ml Milk
  • 2 tbsp Melted Butter
  • Olive Oil for frying

Method

  1. Mix together the flour, baking powder, sugar and a pinch of salt in a bowl. Beat the egg with the milk, make a well in the centre of the dry ingredients; whisk in the milk and melted butter  to make a thick smooth batter.
  2. Heat a frying pan over medium heat and add a knob of butter or a teaspoon of olive oil. Pour a ladle of batter onto the pan. When the upper side of the pancake starts bubbling turn it over to cook the other side. Now cook it for 2-3 minutes until golden brown and fluffy.
  3. Serve them hot right away with some honey or maple syrup drizzled over the top and some fresh berries.
