Bengali Mutton Curry

Ingredients
  • 1 kg Mutton
  • 2 cups Onions (thinly sliced)
  • 1 1/2 cups Potatoes (cut into chunks)
  • 2 inch Ginger
  • 4 cloves Garlic
  • 3-4 Green chillies (small)
  • 4-5 Dried red chillies
  • 4 Bay leaves
  • 4 Cardamom pods
  • 5 Cloves
  • 2 inch Cinnamon stick
  • 1 tsp Turmeric powder
  • 1/2 tsp Red chilli powder
  • 1 1/4 tsp Kashmiri red chilli powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Garam masala
  • 1 1/2 tsp Sugar
  • Salt to taste
  • 3/4 cup Yogurt (beaten)
  • 2 cups water
  • 4 tbsp Mustard oil
Directions
  • Step 1 Grind ginger, garlic and green chillies into a coarse paste.
  • Step 2 Heat mustard oil in a pressure cooker, temper the dried chillies, bay leaves and whole spices for a minute.
  • Step 3 Add in sliced onions, fry them until translucent. Push the onions to side of the pan. Gather the oil to the other side, and add turmeric and kashmiri red chilli powder, saute for a minute. 
  • Step 4 Add ginger, garlic & green chilli paste, red chilli powder and coriander powder, saute for a minute. Pour in beaten yogurt, mix well and saute for few minutes till oil separates. 
  • Step 5 Add in the mutton pieces, saute for 10 minutes on medium heat. Add in potato chunks and pour in 2 cups of water. Pressure cook on low heat for 25-30 minutes after first whistle. Open the lid, add in garam masala and mix it in gently. Serve hot with rice or chapatis.
