Barley and Vegetable Soup

Ingredients
  • 1 cup Barley (rinsed and drained)
  • 2 Carrots
  • 2 stalk Celery
  • 1/2 Onion
  • 1 clove Garlic
  • 1 inch Ginger
  • 2 tbsp Spring onions
  • 1 litre Chicken/ vegetable broth
  • 1 cup Water
  • 1 tbsp butter
  • Salt and pepper to taste
Directions
  • Step 1 Heat oil in a large pot over medium heat. Add butter and saute garlic and ginger, saute for half a minute.
  • Step 2 Add onions, carrots and celery, and saute for 3-4 minutes, stirring constantly. Season with salt and pepper.
  • Step 3 Pour in chicken broth, water and barley, and bring to boil. Simmer for 30 minutes until the barley is tender. Garnish with spring onions and serve.
