Barley and Vegetable Soup

Ingredients
- 1 cup Barley (rinsed and drained)
- 2 Carrots
- 2 stalk Celery
- 1/2 Onion
- 1 clove Garlic
- 1 inch Ginger
- 2 tbsp Spring onions
- 1 litre Chicken/ vegetable broth
- 1 cup Water
- 1 tbsp butter
- Salt and pepper to taste
Directions
- Step 1 Heat oil in a large pot over medium heat. Add butter and saute garlic and ginger, saute for half a minute.
- Step 2 Add onions, carrots and celery, and saute for 3-4 minutes, stirring constantly. Season with salt and pepper.
- Step 3 Pour in chicken broth, water and barley, and bring to boil. Simmer for 30 minutes until the barley is tender. Garnish with spring onions and serve.
