- 1 cup Caster Sugar
- 2 Eggs
- 3 ripe Bananas
- 2 cups Self-raising flour
- 1 tsp Baking soda
- ½ tsp Baking powder
- 3 tbsp Milk
- ½ tsp Vanilla essence
- ½ cup Vegetable oil
- Pre heat the oven to 170 C or Gas Mark 4.
- Grease the cupcake tin with oil.
- Beat together the vegetable oil & sugar. Add the eggs and bananas, mixing well.
- Add the remaining ingredients. Mix well and then pour into the cupcake tin.
- Bake for 20-25 minutes or until golden on top and firm to touch.
