Banana Cupcakes


  • 1 cup Caster Sugar
  • 2 Eggs
  • 3 ripe Bananas
  • 2 cups Self-raising flour
  • 1 tsp Baking soda
  • ½ tsp Baking powder
  • 3 tbsp Milk
  • ½ tsp Vanilla essence
  • ½ cup Vegetable oil


  1. Pre heat the oven to 170 C or Gas Mark 4.
  2. Grease the cupcake tin with oil.
  3. Beat together the vegetable oil & sugar. Add the eggs and bananas, mixing well.
  4. Add the remaining ingredients. Mix well and then pour into the cupcake tin.
  5. Bake for 20-25 minutes or until golden on top and firm to touch.
